Sicilian Style Pizza

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast (1 packet)
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 1/2 tsp salt

For the Sauce:

  • 1 can (28 oz) crushed tomatoes
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

For the Toppings:

  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional toppings: anchovies, pepperoni, olives, mushrooms, onions, etc.

Instructions:

  1. Prepare the Dough:
  • In a small bowl, combine warm water, yeast, and sugar. Stir and let sit for 5-10 minutes until foamy.
  • In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise in a warm place for 1-2 hours or until doubled in size.
  1. Prepare the Sauce:
  • Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté until fragrant.
  • Stir in crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 15-20 minutes. Remove from heat and let cool.
  1. Assemble the Pizza:
  • Preheat your oven to 475°F (245°C). Grease a large rectangular baking sheet or a Sicilian-style pizza pan with olive oil.
  • Punch down the risen dough and stretch it out to fit the baking sheet. Use your fingers to press the dough into the pan evenly, creating a slightly thicker edge around the sides.
  • Spread the prepared sauce evenly over the dough.
  • Sprinkle shredded mozzarella cheese over the sauce, followed by Parmesan cheese. Add any additional toppings as desired.
  1. Bake the Pizza:
  • Place the pizza in the preheated oven and bake for 15-20 minutes or until the crust is golden brown and the cheese is bubbly.
  • Remove from the oven and let cool slightly before slicing.
